
Pea and ham soup
16th March 2018It’s St Patrick’s Day this weekend, so in honour of the Emerald isle’s patron saint I wanted to cook something green.
This pea and ham soup contains just five ingredients. But don’t be fooled by its simplicity; this is one of the tastiest recipes on this site.
It’s thick, rich, sweet and salty all at the same time. And at just under 400 calories it’s almost a meal itself. Get some crusty bread or garlic crackers on the side and enjoy!
Cook the gammon joint as per the instructions on the packaging (or ask your butcher).
When the gammon has around 30 minutes to go, sweat the onion in a large pan over a low heat with the lid on for around 5 minutes.
Add the stock and the potatoes and bring to a simmer for around 15 minutes, until the potatoes are almost cooked.
Tip in the peas, bring back to a simmer and cook for a further 5 minutes.
Use a hand blender to liquidise the soup. Remove the gammon from the oven and cut into small chunks.
Serve in bowls with the gammon chunks on top.
