Warm chicken, goats cheese and walnut salad

It’s not exactly salad season yet – so the good news is that most of the ingredients in this salad are warm.

It’s really quick and easy to prepare and the goats cheese starts to melt when it comes into contact with the hot chicken and potatoes.

It’s high in protein and bursting with flavour.

 1 chicken breast
 100 g baby new potatoes
 1 pear, cut length-ways
 25 g baby spinach
 45 g goats cheese, cut into small pieces
 15 g walnuts, chopped

Season the chicken breast, wrap in foil and bake in the oven until it's cooked through.

While the chicken is cooking, cook the potatoes in boiling water.

Once they're cooked, drain the potatoes and chop into quarters. Remove the chicken from the oven and slice.

Place the spinach in a bowl and add the remaining ingredients in layers on top starting with the potatoes, followed by the pear, chicken, goats cheese and walnuts.
