
Beef stroganoff
23rd March 2018This is my take on a classic beef stroganoff – but without the calories. Tender, lean Aberdeen Angus steak in a low fat creamy sauce. What’s not to love?!
Fry the onion, garlic and mushrooms in a large saucepan until the onion begins to brown. Use some 1 cal frying spray or oil (but remember to add the calories if you do the latter). Then remove from the pan with a slotted spoon and set aside.
Add the beef to the same pan and stir fry until sealed, before removing from the pan.
Add the stock to the pan and bring to a simmer. Add the cornflour (mixed in a little water so that it forms a paste). Stir the sauce until it thickens.
Return the beef, onions, garlic and mushrooms to the pan and simmer over a low heat for 45-60 minutes, or until the meat is tender.
Stir in the creme fraiche and serve with the rice.
