Beef stroganoff

Beef stroganoff

This is my take on a classic beef stroganoff – but without the calories. Tender, lean Aberdeen Angus steak in a low fat creamy sauce. What’s not to love?!

 1 large onion, chopped
 1 tsp chopped garlic
 250 g mushrooms, chopped
2 beef stock cubes, dissolved in 500ml of boiling water
750 g diced Aberdeen Angus stewing steak
 1 tsp cornflour
100 g half fat creme fraiche
200 g long grain rice (uncooked weight)

1

Fry the onion, garlic and mushrooms in a large saucepan until the onion begins to brown. Use some 1 cal frying spray or oil (but remember to add the calories if you do the latter). Then remove from the pan with a slotted spoon and set aside.

2

Add the beef to the same pan and stir fry until sealed, before removing from the pan.

3

Add the stock to the pan and bring to a simmer. Add the cornflour (mixed in a little water so that it forms a paste). Stir the sauce until it thickens.

4

Return the beef, onions, garlic and mushrooms to the pan and simmer over a low heat for 45-60 minutes, or until the meat is tender.

5

Stir in the creme fraiche and serve with the rice.
