
Quesadillas
31st December 2017This is one of my favourites. And with good reason, too: it’s so tasty and even though you can’t just shove it in the microwave when you get home from work, you’ll still have it on the table within 5 minutes.
Quesadillas traditionally consist of corn tortillas folded over a filling of cheese, onions and chillies – but my version takes it to the next level by adding protein-rich lean steak mince and tasty, tangy fajita spices.
As with all my recipes, this is perfect for a weeknight meal and the seasoned mince can be frozen and defrosted in advance as required. So, cook up the mixture in advance and then you just need to remember to keep some tortilla wraps handy!
I usually stick a portion of mince in the microwave for 60 seconds while the tortilla is warming up in the frying pan, then tip the mixture onto the wrap, add some cheese, fold, and allow to heat through.
This goes really well with a simple salad – with some jalapeños, of course – but you could also have it with rice, refried beans or just some salsa.
Soften the onion and brown the mince in some oil. Add the fajita spice sachet and cook through on a low-medium heat for about 20-25 minutes.
Put a wee bit of oil in a frying pan on a medium heat and add the tortilla. Leave it for a minute. It may start to puff up, don't let it burn.
Spread a layer of mince over one half of the tortilla and sprinkle over some cheese.
Fold the tortilla in half, reduce the heat and cover with a lid until the cheese has melted.
Remove from the pan and cut into 3 pieces. Serve with a salad.
