Sweet and Crunchy Chicken Pitta Salad

While a £3 Co-op meal deal can be quite healthy, it can be a bit bland and boring. Shake-up lunchtimes with a tasty chicken pitta salad, which is my take on the infamous Waldorf Salad. Poached chicken breasts are wrapped in mayonnaise and mixed with sweet raisins and crunchy walnuts for an indulgent meal that has caused some lunch envy in the office!

Yields1 Serving

 1 Pitta bread
 100 g Cooked chicken breast, cut into small chunks.
 60 g Cherry tomatoes
 30 g Baby gem lettuce
 20 g Real mayonnaise
 15 g Raisins
 15 g Walnuts

In a bowl, mix all other ingredients together with the mayonnaise. This can then be stored in the fridge until you're ready to serve.

Pop the pitta bread in the toaster for a couple of minutes to heat it through. Keep an eye on it - don't let it burn! Remove from toaster cut along one side to open it up.

Stuff the pitta bread with the filling. Enjoy immediately.
